A true treasure of the Ethiopian forest, the Old Yeti coffee is an exceptional Grand Cru (SCA score 88+) selected by Terres de Café. This foundational project, led by Christophe Servell, focuses on isolating the harvest from century-old coffee trees growing wild on the Dinsa Soreso plot in the Wallagga region. Much like old grapevines, these ancient trees produce fewer fruits, but the cherries are twice as long and incredibly concentrated in sugars. Processed using the "Red Honey" method, this coffee reveals a cup of rare complexity and sweetness. Its aromatic profile blends notes of undergrowth, cocoa, and wild berries, with a long-lasting finish of dried strawberry and sweet spices. A "Pur Cru" coffee with a velvety body, perfect for a contemplative tasting whether as an espresso or using slow-brew methods.
